Bear’s New England Clam Chowder

Happy World Series!!! We made our game day dinner LIVE! Since my husband is from Boston & his family is visiting we had to have New England Clam Chowder. No matter who you’re pulling for you can’t go wrong with my (father in law) Bear’s classic chowder..

Bear’s New England Clam Chowder

4 slices bacon, diced

2 tablespoons butter

2 celery stalks, diced

1 large onion, diced

1 clove garlic, minced

1/2 lb Yukon gold potatoes, chopped into bitesize pieces

2 tablespoons flour

1 1/2 cup clam juice

1 1/2 cups heavy cream

1 1/2 pounds canned clams (in their juices)

Salt & Pepper

2 tablespoons chopped fresh chives

In a dutch oven over medium-high heat, melt butter then add the bacon. Cook until bacon is crispy. Remove bacon and set aside. Chop celery, onion and garlic and add to butter and bacon fat. Cook about 2 minutes or until vegetables are soft. Add flour. Stir constantly for a few minutes or until flour smells like pie crust. Add potatoes & clam juice and simmer for, 10 to 15 minutes.. Add clams and cream. Cook for another 5 minutes. Season with salt & pepper to taste. Garnish with bacon & chives.
