Simple Shrimp Scampi

This dinner is a 10/10 & takes  about 10 minutes. Shrimp Scampi is quite possibly the quickest entrée I make & the kids LOVE it. Be sure to get fresh, raw shrimp. Ask for “peeled and deveined” to save on time AND if (I’m being real) shrimp guts totally gross be out so that’s a hard pass for me. 

(Serves 4)

½ pound fresh linguini 

3 tablespoons olive oil + more for drizzling

3 tablespoons butter 

4 garlic cloves, minced

1/2 cup white wine

Salt & pepper

1 ½ pounds large or jumbo raw shrimp, peeled and deveined 

1/4 cup chopped parsley 

1 lemon

Salt and pepper, to taste

Parmesan cheese, to taste

Cook pasta in salted water according to package instructions for al dente.

Heat oil and butter in a large skillet over medium high heat. Add garlic and sauté for 1 minute being careful not to burn. Pour wine into skillet and reduce for two minutes. 

Fold in shrimp and cook until pink. Finish with juice from half a lemon, parsley and generously season with salt and pepper.

Add the pasta to your skillet and toss with the shrimp. Top with a healthy drizzle olive oil, freshly grated Parmesan cheese, a sprinkling of parsley and garnish with lemon wedges.
