Corned Beef & Cabbage Crack

It’s that time of year again! I love to celebrate with corned beef & cabbage! I start the corned beef in the crockpot in the wee hours & let it cook all day. Then whip up the “cabbage crack” and you’ve got yourself a pot of gold! Happy St Patrick’s Day!

CORNED BEEF

Corned Beef Brisket with seasoning packet (I used 2.5 lbs this year)

1 large onion, quartered

1 Guinness

Add the corned beef, contents of seasoning packet and onion to a crockpot. Cover with Guinness and cook for 4 hours on high or 6-8 hours on low.

CABBAGE CRACK

3 tablespoon butter

1 cup vinegar

2 tablespoons sugar

1 head cabbage (about 2 pounds), roughly chopped into bite size pieces

Salt and pepper, to taste

Melt butter in a large pot over high heat. Stir in vinegar and sugar and bring to a boil. Add cabbage and toss to coat. Cover pot and reduce heat to a simmer and cook for 30 minutes or until cabbage is tender. Stir occasionally so the cabbage doesn’t burn or stick. Season with salt and pepper, to taste.
