Pan-Fried Fish with “Awesome Sauce”
Serves 4
This sauce is awesome!! Tomatoes, lemon, wine, and olives come together in a bright, flavorful sauce that’s perfect with delicate white fish. Best of all, it’s on the table in about 20 minutes! This recipe & more can be found in my cookbook, Oh $#!%, What’s for Dinner?
For Fish:
4 pieces (about 1½ pounds) mild white fish (halibut, flounder, snapper, tilapia, or mahi-mahi)
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil
1 tablespoon butter
For Awesome Sauce:
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
¼ cup white wine
1 can (14.5 ounces) diced tomatoes,
¼ cup Kalamata olives, roughly chopped
1 tablespoon fresh parsley, chopped
1 lemon, halved
Pat the fish dry and season both sides with the salt and pepper.
Heat 2 tablespoons of olive oil and 1 tablespoon butter in a large non-stick skillet over medium-high heat. Add the fish and cook for 3-4 minutes per side, or until golden and cooked through. Transfer the fish to a plate and set aside.
In the same skillet, add 1 tablespoon olive oil, and onion and cook for 2–3 minutes, until softened. Stir in the garlic and cook for 1 minute, until fragrant.
Add white wine and simmer for 2-3 minutes allowing it to reduce slightly.
Stir in the tomatoes, olives, parsley. Reduce heat and simmer for 3–5 minutes, allowing the flavors to come together. Season sauce with salt & pepper to taste.
Return the fish to the skillet. Finish with the juice of half a lemon then garnish with the remaining lemon, sliced into rounds.
