Anything Goes Veggie Frittata

This is one of my favorite recipes for brunch! Literally anything goes as far as veggies. But today I used asparagus, spinach and Roma tomatoes. Here’s the EASY recipe! Enjoy!

ANYTHING GOES VEGGIE FRITTATA

SERVES 4

3 tablespoons olive oil

1 small onion, finely chopped

2 cups chopped vegetables of your choice

3/4 teaspoon salt, divided

1/4 teaspoon pepper, divided

8 eggs

1 cup shredded or crumbled cheese (like cheddar, Gruyère, feta, goat cheese), divided

1 Preheat oven to 375 degrees.

2 Heat oil in a 10-inch cast-iron skillet or oven-safe frying pan over medium-high heat. Sauté

onions and chopped vegetables, season with half the salt and pepper, and cook for 10 minutes or until tender.

3 In a large bowl, beat eggs then fold in 1/2 cup of cheese and remaining salt and pepper.

4 Pour egg mixture into skillet and cook over medium heat for 5 minutes, allowing eggs to set up. Top with remaining cheese.

5 Transfer to the oven and cook for another 10 minutes or until eggs are cooked through.
